Its purposes are: to perfect French and Swiss culinary art; to highlight the works and achievements of its members or prominent figures in the culinary world; to facilitate all initiatives aimed at maintaining its prestige and better promoting its vocation as an undisputed representative of the quality and global value of French and Swiss cuisine; to defend the authenticity of culinary designations and protect them, to denounce any deception that undermines the integrity of culinary art; to modernize or adapt certain recipes, to recognize and approve any recipe creation that can make a serious contribution to culinary art and its adaptation; the exercise of its work extends to the quality of intellectual expression, vocabulary and language of convention indispensably linked to culinary art; to establish relationships with all French, Swiss or foreign groups with a recognized culinary or gastronomic vocation and to organize, participate in or promote all authentic culinary or gastronomic events; the association operates on a non-profit basis.
